this made enough for 2 hearty servings. thrown into the pot:
- 2 emmentaler-stuffed turkey burgers (leftover from saturday night-- i had cooked them after freezing), defrosted and broken up
- pouch kashi 7-grain pilaf (roughly 2 cups in the pouch)
- frozen broccoli
- frozen corn
- frozen peas
- 3/4 can diced tomatoes
- couple large handfuls herbed baby salad mix (mix has cilantro/dill/parsley in it)
- 1-2 tsp malasian spice mix (coriander, cumin, cinnamon, chili powder)
- s & p
- sunflower seeds, toasted in microwave for 45 seconds
- grated emmentaler
this was tasty and satisfying. after all that veggie talk, i think i was craving meat! i can't think of anything interesting to say right now. . . too exhausted. oh, i got reassurance today from my nutritionist-- she told me my weight has varied less than 1/2 a pound within the past 3 weeks. score!
