1 pot dinner

despite having an afternoon snack (i forgot to include it in this morning's post because it was left at work from last week-- mini pretzels and a tub of applesauce), i was starving when i got home. i made the easiest dinner ever, and it turned out great.

this made enough for 2 hearty servings. thrown into the pot:
  • 2 emmentaler-stuffed turkey burgers (leftover from saturday night-- i had cooked them after freezing), defrosted and broken up
  • pouch kashi 7-grain pilaf (roughly 2 cups in the pouch)
  • frozen broccoli
  • frozen corn
  • frozen peas
  • 3/4 can diced tomatoes
  • couple large handfuls herbed baby salad mix (mix has cilantro/dill/parsley in it)
  • 1-2 tsp malasian spice mix (coriander, cumin, cinnamon, chili powder)
  • s & p
topped with:
  • sunflower seeds, toasted in microwave for 45 seconds
  • grated emmentaler


this was tasty and satisfying. after all that veggie talk, i think i was craving meat! i can't think of anything interesting to say right now. . . too exhausted. oh, i got reassurance today from my nutritionist-- she told me my weight has varied less than 1/2 a pound within the past 3 weeks. score!
