serious lunch.

after a perfect 3 mile run outside (first run since last tuesday when i first felt sick), i decided i'd cook up the sweet potato i'd bought... in fry form. i mixed up some ground coriander, cloves, anise seeds, cinnamon, and chili powder, and, lacking a mortle&pestle, used a hammer over folded wax paper to ground the spices together (hey, it totally worked). cut sweet potato (well half actually) into fry strips, drizzled with a bit of olive oil & sea salt, and tossed on a baking sheet. took about 30 minutes to bake (at 425), tossing halfway. a few got a bit darker than i would have liked, but the flavor was really yummy.

spiced sweet potato fries + ketchup, dr. praeger's veggie burger with pepper jack cheese and ketchup on an ezekiel english muffin, peas

yum!

so glad to be feeling better and able to eat what i want.

  1. Hi Rebecca! Thanks for your comment on my blog. The Maple Banana Cornbread would definitely work as muffins! I've never done it, but I would estimate it taking somewhere around 20 minutes.

    P.S. I LOVE sweet potato fries!
