back to work!

i couldn't decide what to pack for lunch today, so i made breakfast first.

i made a crazy bowl of oatmeal !

stovetop: 1/2 cup oats, 1/2 cup water, 1/2 cup vanilla soymilk, 1/2 large banana, cut in thin slices, pinch salt

toppings: 1/4 pistachio larabar, about a T butterscotch chips, 1 T pecan butter

** 2.5 starch, 1/2 dairy, 2 protein, 2 other ** ?

i felt almost as if i shouldn't have been eating this. but really the only somewhat "unhealthy" thing is the butterscotch chips, and i don't think 1 T will hurt me.

i went with a variety pack for lunch, creatively (i think!) using up a couple leftovers. nuked 1/2 a sweet potato i hadn't used for the soup, cut that into strips (so good cold with lunches), made a mini salmon salad with about 1 oz. of salmon leftover from last night + a bit of chobani and light mayo + some dill that was actually still fresh from the ratatouille endeavor, to serve with kashi tlc crackers (2 kinds! because i only had a few of the 7-grain left, and so opened up a box of honey-sesame), plus a cup of chobani with raspberries and a pinch of maple granola on top. this all took about 5 minutes, and i think it will be a fun (and balanced) lunch!

i didn't pack a morning snack. with the massive oatmeal bowls i've been having, i really don't get hungry for one. for an afternoon snack...
