pecan butter and comfort food

i very randomly made pecan butter this afternoon. some blogger wrote about making her own peanut butter, and i suddenly thought of the bag of pecans i bought for a thanksgiving recipe and haven't eaten since. so i decided to make pecan butter! i loosely followed this recipe, by the trustworthy alton brown, and used about a T walnut oil in place of the peanut oil. i tasted the result and i think it's quite yummy. i will try it on my oatmeal tomorrow morning:

of all my leftovers in the freezer, i wanted something comforting, and so i thought of mac & cheese with peas and salmon. i got hungry a bit after 7. i used an annie's mac & cheese packet, frozen peas, 3 oz. canned salmon, 1-2 T milk, and about a tsp. butter.

** 2 starch, 3 protein, 1 veg, 2 other **


i think this was a slightly skimpier dinner than most, but i'm full for now, so i'll make sure to have a good snack later.

my cat is into finding new (and high) places lately. i was looking for her for a while (not worried, just for fun) until i realized she was she was happily lounging sky high. she's a good jmper!


when she saw me she perked up!

  1. Very cool! I made mine with only pecans and it's a little runny. What was yours like?

  2. hmmm not runny, pretty close to other nut butter consistencies, but maybe slightly drier. yours looks delish though!
