a nice walk outside did me some good. by the time i got back (around 1:30) i was getting hungry. i had a bit of kitchen cleaning to do before settling into lunch, so i'm only now finishing up... at 2:40.

this morning i whipped up a cannellini bean spread to have with lunch-- i was inspired after having it yesterday while out for lunch.

not quite sure why this picture sucks.

i used a whole foods recipe, with a couple minor adjustments. here's what i did:

cannellini bean spread

  • 3 T olive oil
  • 3 large garlic cloves, pushed through a press
  • 1/2 t crushed red pepper
  • 1 14.5 oz can cannellini beans, drained and rinsed
  • juice of 1/2 a lemon, or more to taste
  • pinch cayenne
  • sea salt and ground pepper, to taste
heat oil in small saucepan. add garlic and cook over low heat for 2 min. remove from heat, add red pepper flakes, and let sit for flavors to meld, at least 30 min. drain olive oil into a small bowl or glass measuring cup, and reserve. place beans and drained garlic/red pepper in food processor and process until smooth. whisk lemon juice, cayenne, salt, and pepper into reserved oil. with motor running, add olive oil mixture to beans, and process until smooth. allow to sit at room temperature so that flavors intensify.

the spread turned out awesome. just a bit of a kick from the red pepper flakes & cayenne, but none of that mouth on fire / can't taste anything spice.

i still feel slightly blah. i think i'm ready for the weekend to be over. of course, come tomorrow i will crave some time to myself...
